Hummingbird Cupcakes

I've been seeing quite a few recipes for Hummingbird Cakes or Cupcakes all over the blogosphere for a few years now. To be honest, the name just didn't appeal to me. It never interested me to even look into what was in a hummingbird cupcake. However, I knew it was a Southern favorite, with recipes passed down from mothers, grandmothers, great grandmothers.

Because I frequent Pinterest a lot, this cupcake version came up from A Spicy Perspective. I clicked on it and found out its made of all kinds of yummies - pineapple, coconut, banana, and pecans. Just like how a tropical Hawaiian dessert would entail. I just knew hubby would love this cupcake. Its got everything he loves. So I had to make it. I replaced the frosting in the recipe with my go-to cream cheese frosting and the outcome was delicious. It went over so well with hubby. This has become one of his favorite cupcakes I make. I don't know why I never bothered to make this. Now I'm going to make this more often.

Cupcakes
3 cups all purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
1 1/2 cups sugar
1 cup (2 sticks) unsalted butter, at room temperature
4 eggs
1 Tbsp. vanilla extract
3 bananas, mashed
1 cup crushed pineapple, with juices
1 cup shredded coconut
1 cup chopped pecans

1) Preheat oven to 350 deg F. Line muffin tins with paper liners.

2) Combine the first 4 dry ingredients in a medium bowl. Set aside.

3) In the bowl of an electric mixer, cream together butter and sugar until light and fluffy, about 3-5 minutes. Turn the mixer down on low and add eggs and vanilla extract, scraping down the sides of the bowl. Slowly add the flour mixture. Add bananas, pineapple with the juices, coconut, and pecans. Continue until blended well.

4) Scoop batter into paper lined muffin tins, about 3/4 full. Bake for 18-20 minutes until tops are golden and bounces back when touched. Cool in pan for a few minutes, then cool completely on a cooling rack. Frost with cream cheese frosting.

Brown Sugar Cream Cheese frosting
1 1/2 cups (3 sticks) unsalted butter, at room temperature
8 oz cream cheese, softened
1/4 cup brown sugar, lightly packed
1 tsp. vanilla extract
pinch of salt
4-6 cups powdered sugar
2-4 Tbsp. milk, depending on consistency

1) In the bowl of an electric mixer, cream the cream cheese for about 1 minute. Add butter and beat for 1-2 minutes until incorporated.

2) Add brown sugar, salt, and vanilla extract and beat until well incorporated.

3) 3) Slowly add 2 cups of powdered sugar and beat well. Continue adding powdered sugar and alternating with the milk until desired consistency. Frost cupcakes.

Zucchini Bread


For the past month or so, I had been seeing a lot of zucchini recipes on Pinterest. I guess because it was zucchini season. It sounded weird to me that zucchini was a main ingredient for something sweet. I always thought it to be used in a savory dish. So I wasn't too interested in any of the different versions of zucchini bread that popped up all over Pinterest. Don't get me wrong. I absolutely LOVE zucchini. Just not in a sweet form.

Well one day, an old co-worker brought in some freshly baked banana and zucchini breads for her last day in our office. She suggested I try the zucchini bread. I hesitated a bit, but I went for it. Let's just say that I went back for thirds and fourths. It was delicious. Not too sweet and you don't even taste the zucchini! It was just like eating a spice cake. And since I had been seeing a lot of zucchini bread recipes lately, like this one from Oh My! Sugar High, I decided to give it a go. I wanted to make this for my family, especially for my girls, to try out. Its a great way to sneak in some of their veggies. And they LOVED it. In fact, my older daughter has asked me to make more. I also gave some for my folks and they also loved it. This will definitely be made frequently at home. Serve it warm with some butter, or at room temperature. Yum!

3 cups all purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. nutmeg (optional)
3 eggs
1 cup vegetable oil
2 1/4 cup sugar
3 tsp. vanilla extract
2 cups grated zucchini (with some of the liquid squeezed out)
1 cup chopped pecans or walnuts

1) Preheat oven at 350 deg F. Grease and flour 2 8-inch or 9-inch loaf pan and set aside.

2) In a medium bowl, combine flour, salt, baking powder, baking soda, cinnamon, and nutmeg (if using). Set aside.

3) In a bowl of an electric mixer, beat together eggs, oil, sugar and vanilla extract. Add dry ingredients and beat until well combined. Batter will be thick.

4) Fold in zucchini and nuts until well combined. Pour in prepared loaf pans and bake for 40-60 minutes, until toothpick test comes out clean. Cool in pan for 20 minutes. Then cool completely in a wire rack.

Lemon Blueberry Bread

I know I've somewhat neglected this blog for a while. Having a six year old with tons of activities at school and a 1 year old needing attention will make me do that. I'm not complaining though. I'm so blessed and thankful to have healthy children and a busy household. But now that I have another daughter to look out for, I really needed to get back to my food blogging so both my children can benefit from this. I want to start creating memories with her in the kitchen like I did with my 6 year old. I can't wait to have both my girls with me in the kitchen. Its what I've always dreamed of.

I had been craving something lemony to make one day. But I had a huge batch of blueberries that I bought from Costco that needed to be used up. So in search of a great recipe, once again, turned to my favorite Pinterest and found this recipe from Notes from the Heartland.

This had just the right amount of tartness I was looking for and not overly sweet. I brought this to work and my co-workers really enjoyed it. Its a great way to use up those blueberries.

1 1/2 cup, plus 1 Tbsp. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 cup plain yogurt
1/2 cup sugar
2 eggs
2 tsp. grated lemon zest
1/2 tsp. vanilla extract
1/2 cup vegetable oil
1 1/2 cups blueberries (fresh or frozen)

1) Preheat oven to 350 deg F. Grease a 9x5 loaf pan.

2) Sift dry ingredients together. In a separate bowl, mix wet ingredients together. Add wet ingredients to dry ingredients and stir to combine.

3) Mix the remaining 1 tablespoon of flour with the blueberries, being careful not to crush the blueberries. Gently fold blueberries into batter just until combined. Pour into prepared pan and bake for 50 minutes or until toothpick test comes out clean. Cool for 10 minutes then remove from pan.

Lemon syrup
1/3 cup fresh lemon juice
1/3 cup sugar

1) Dissolve sugar and lemon juice in a small pan over medium heat. Cook for 3 minutes, stirring constantly.

2) Remove from heat. Place blueberry bread on a plate. Poke with a fork or wooden skewer several times. Brush the bread with the lemon syrup.

Lemon glaze
1/2 -  1 cup powdered sugar, sifted
2-3 Tbsp. fresh lemon juice

1) Stir together powdered sugar and lemon juice until well combined.

2) Pour glaze over blueberry bread.

Chocolate Pistachio Cupcakes




Its been a while since I've made any new cupcakes. I'm usually making my staple cupcakes of Red Velvet, and Banana cupcakes. But I wanted to replicate a Chocolate Pistachio cupcake I get from my local cupcake shop that I love so much. So I searched my ever-so favorite site, Pinterest, and found this recipe from The Little Kitchen. 

I used my new favorite Chocolate Frosting. However, I feel like this frosting was too rich and it overpowered the Pistachio flavor of the cupcake. The cupcake was delicious. It had just the perfect amount of pistachio flavor. I may play around with the frosting to match the cupcake a little more. Stay tuned....

Pistachio Cupcakes
1 1/2 cups all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. sat
3.4-3.5 ounce box of instant Pistachio pudding
1 stick (1/2 cup) unsalted butter, softened
2/3 cup sugar
1 1/2 tsp. vanilla extract
1 tsp. vegetable oil
2 eggs
1 egg white
1/2 cup milk

1) Preheat oven to 325 deg F. Line cupcake pan with cupcake liners. Set aside.

2) In a medium bowl, whisk together flour, baking powder, salt, and instant Pistachio pudding. Set aside.

3) In a bowl of an electric mixer, cream together butter and sugar until light and fluffy, about 2 minutes. Add oil and vanilla extract and mix until well combined. Add eggs and egg white, one at a time until completely incorporated. Scrape the side of the bowl with a rubber spatula as needed.

4) Add dry ingredients and incorporate with a rubber spatula until most of the dry ingredients are moistened. Its okay if there is still some unincorporated flour. Add milk and mix on the mixer over low speed for about 30 seconds. Scrape down the sides and continue mixing on low for another 30 seconds until batter is smooth.

5) Fill prepared liners with the batter about 3/4 full. Bake for 20-22 minutes, or toothpick test comes out clean. Cool completely before frosting.

Chocolate Frosting

9.5 oz chocolate chips (bittersweet, semi-sweet, or milk chocolate chips)
6 oz cream cheese, at room temperature
6 Tbsp. unsalted butter, at room temperature
2 cups confectioner's sugar, sifted
4 Tbsp. cocoa powder
pinch of sat
2/3 cup sour cream

1) Melt chocolate in a heat-proof bowl set over pot of simmering water (double boiler). Set aside to cool until just barely warm.

2) In a bowl of a stand mixer fitted with a paddle attachment, beat cream cheese and butter over medium-high speed until pale and fluffy, about 3-4 minutes. Gradually add in confectioner's sugar, cocoa powder and salt. Beat in melted and cooled chocolate and then sour cream. Continue beating until mixture is smooth and well blended. Frost cupcakes immediately before chocolate hardens and frosting sets.

Red Velvet Cheesecake


I've had this recipe pinned on Pinterest from Recipe Girl for a while to make for today. I absolutely love anything that has to do with Red Velvet. And what's more festive than having a red dessert for Christmas? And a cheesecake at that. If you've ever eaten at the Cheesecake Factory and you love red velvet like I do, then I'm sure you know all about their Red Velvet Cheesecake. And so for this special day, I decided to make it for our families as one of our desserts.

This desert requires quite a few steps, and possibly 2 days to make because you have to freeze the cheesecake first, and do a crumb coat for the frosting. Then I used my own tried and true recipe for recipe for the red velvet cake part. Labor intensive, but the result was amazing. I first made this a few weeks ago to test out the recipe. Obviously, hubby and I couldn't finish the whole cake, so I sent half of the cake with hubby to work and it seemed to have gone over well with them. This is definitely going to be a repeat recipe for a special occasion like today.

Cheesecake
2 (8 oz) cream cheese, at room temperature
2/3 cup sugar
pinch of salt
2 eggs
1/3 cup sour cream
1/3 cup heavy whipping cream
1 tsp. vanilla extract

1) Preheat oven to 325 deg F. Place a roasting pan on the lower third rack of the oven. Heat 4-6 cups of water to a boil in the microwave or a kettle on the stove. Grease a 9-inch spring form pan and place parchment paper at the bottom of the pan. Wrap the outside of the pan with a double layer of foil to prevent water from entering the pan. Set aside.

2) In a bowl of an electric stand mixer, cream the cream cheese until smooth. Mix in sugar and salt, and continue blending for about 2 minutes, scraping down the sides of the bowl as needed. Add eggs one at a time, blending well after each addition. Mix in sour cream, heavy cream and vanilla and blend well until smooth.

3) Pour batter into prepared pan and place in the roasting pan inside the oven. Carefully pour boiling water into the roasting pan enough so that it reaches about an inch on the side of the cheesecake pan. Bake for 45 minutes until the cheesecake is set and no longer jiggly.

4) Cool cheesecake on a cooling rack for at least an hour. Once cooled, place cheesecake in freezer until completely frozen, or overnight.

Red Velvet Cake
2 1/2 cups cake flour
1 1/2 cups sugar
1 tsp. baking soda
1 Tbsp. cocoa powder
1 tsp. salt
2 eggs
1 1/2 cups vegetable oil
1 cup buttermilk
2 Tbsp. (1 oz bottle) red food coloring
1 tsp. vanilla extract
1 tsp. white distilled vinegar

1) Preheat oven to 350 deg F. Grease and flour 2 9-inch  round pans and set aside.

2) Sift together cake flour, sugar, baking soda, cocoa powder, and salt into a medium bowl. Beat eggs, oil, buttermilk, red food color, vanilla extract and vinegar in a large bowl of an electric mixer until well combined.

3) Slowly add dry mixture into wet mixture and beat until smooth, about 2 minutes. Pour batter into prepared pans and bake for 25-30 minutes, until toothpick test comes out clean. Allow to cool in the pan for 10 minutes, then completely cool on a cooling rack.


Brown Sugar Cream Cheese frosting 
1 1/2 cups butter, softened
8 oz cream cheese, softened
1/4 cup light brown sugar, packed
1 tsp. vanilla extract
pinch of salt
4-6 cups powdered sugar
2-4 Tbsp. milk, depending on consistency

1) Cream the cream cheese with an electric mixer for about 1 minute. Add butter and beat for 1-2 minutes, until well incorporated.

2) Add brown sugar, salt, and vanilla extract and beat until well incorporated.

3) Slowly add 2 cups of powdered sugar and beat well. Continue adding powdered sugar and alternating with the milk until desired consistency.

To assemble the Cheesecake
1) Unmold the frozen cheesecake from the spring form pan. Place in between the two layers of cake. Apply a thin layer of frosting to act as a crumb coat on the layered cake. Place in the freezer for 10-15 minutes for the frosting to set.

2) Complete frosting the cake with a thicker layer of frosting and decorate as needed. You can decorate with white chocolate shavings. Keep cake refrigerated until serving.

Pumpkin Dream Cake


I've noticed that I haven't done any new pumpkin recipes this fall. But I did stock up on some pureed pumpkin that I've roasted and pureed. Its sort of been my tradition every year ever since my older daughter was born - to buy loads of pumpkin around Halloween and then roast and puree them for later use. I use them to make my now famous Pumpkin Cake Roll that I make a ton of around the fall, as well as Pumpkin soup, and Pumpkin Spice Pancakes.

This year, I'm so excited to finally get a chance to make this Pumpkin Dream Cake from one of my favorite blogs, The Novice Chef. I've had this recipe saved up ever since I first saw it on her blog last year. Unfortunately, I couldn't make it then because I was in my first trimester of my 2nd pregnancy, suffering from a bad case of morning sickness. So no pumpkin puree or any pumpkin recipe in the fall of 2012. But I vowed that it would be my first pumpkin recipe to try out. And boy was it worth the wait.

I never used to like anything that had to do with pumpkin. But I discovered that it was the spices associated with pumpkin that I didn't like: nutmeg, ground ginger, all spice, cinnamon. Don't get me wrong. I love all those spices. Just not all together with pumpkin. I guess that's why I don't like pumpkin pie or pumpkin spice latte that's been all the rage lately. I'm pretty selective with the spices and flavorings I use with pumpkin in my recipes. This cake hardly has any of the traditional spices in the cake. Which is why I absolutely love this cake. And its so moist and fluffy. After testing this recipe out, hubby has asked me to make it for his family's Thanksgiving luncheon. And I was happy to oblige.

Cake
3 cups all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup unsalted butter, softened
2 cups sugar
3 eggs
1 Tbsp. vanilla extract
2 cups pumpkin puree (or 1- 15 oz can puree)
1/4 cup vegetable oil
1 cup milk

Cinnamon Maple Cream Cheese Frosting
12 oz (1 1/2 packages) cream cheese, softened
3/4 cup unsalted butter, softened
3 Tbsp. pure maple syrup (optional, because I didn't have any)
2 tsp. vanilla extract
2 tsp. ground cinnamon
6 cups confectioner's sugar

1) Preheat oven to 300 deg F. Grease 3-8 inch pans. Set aside.

2) In a medium bowl, combine flour, baking soda and salt. Set aside.

3) In a large bowl of a stand mixer, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, pumpkin and vegetable oil. Slowly beat in flour, alternating with the milk. Continue beating until well combined.

4) Divide batter evenly into prepared pans. Bake for 35-40 minutes until toothpick test comes out clean. Remove pans from the oven and immediately place in the freezer to cool for 45 minutes. This will keep the cake moist by immediately stopping the baking so the cake does not continue to bake when you remove it from the oven.

5) For the frosting: In a large bowl, cream together butter and cream cheese over medium speed until smooth. Beat in maple syrup (if using), vanilla and cinnamon. Slowly add confectioner's sugar on low speed until combined, then on high until frosting is smooth.

6) Assemble the 3 layers with a thick layer of frosting in between each layer. Then apply a thin crumb coat on the top and the sides. Place in the freezer to harden the crumb coat for about 10 minutes.
Then apply one thick layer of frosting around the outside of the cake. Refrigerate until ready to serve.

Sno-Ball Cake

Happy birthday my wonderful hubby!

Since my birthday, I had been picking my brain trying to figure out what kind of cake I could make for his birthday. Hubby recently informed me that when he was a kid, the only kind of cake he would get (or even ask for) for his birthday was a Hostess Sno-Ball. You know those bright pink marshmallow, chocolate cake treats? Now, I've had my fair share of Sno-Balls during my youth. However, I found it a little strange to be celebrating with a store-bought, vacuum-packed little snack treat.

Then, I had a crazy idea. A while ago, I made some homemade Hostess Cupcakes, right? Why not make homemade Sno-Balls??? Hubby would totally love that! And since its his birthday, I decided to make it into a cake. I used my go-to chocolate cake recipe and the marshmallow fluff from my recent Fluffernutter Cupcakes and assemble to look like a Hostess Sno-Ball. I had some leftover batter, so I used it to make cupcakes/individual versions as well.  And the result was a yummy, moist chocolaty, marshmallow-y treat reminiscent of our youth. Hubby took his first bite and he immediately said it brought him back to the 1st grade.

1 recipe for chocolate cake
prepared marshmallow fluff
shredded coconut
red food color

1) Preheat oven to 350 deg F. Grease and flour an oven-safe bowl of desired size. Set aside.

2) Prepare cake according to directions. Pour batter into prepared bowl about three-quarters full. Bake for 35-45 minutes, or until the cake is set and toothpick test comes out clean. Allow cake to cool in the bowl for about 10 minutes. Remove cake from bowl and invert on a cooling rack to cool completely.

3) Using a serrated knife or cake leveler, carefully slice a thin layer off the flat side of the cake. Set aside. Create a large hole by hollowing out the center of the flat side of the remaining cake. Fill the hole with a good amount of marshmallow fluff. Replace the thin layer of cake back on the cake.

4) Invert the cake on a platter, flat side down. Cover the rounded part of the cake with globs of marshmallow fluff and smooth out.

5) Place a good amount of shredded coconut and a few drops of food color in a food processor. Pulse the processor until the color of the coconut has turned bright pink and you've reached the desired consistency of the coconut. Press pink coconut on top and all over the surface of the frosted cake. Serve.

Biscoff Cupcakes

In continuing with my birthday celebration week, I said that I had made 2 new cupcake recipes for my special day. I made Fluffernutter Cupcakes and these Biscoff Cupcakes from The Three Little Piglets.

I jumped the Biscoff bandwagon almost a year ago and have become obsessed with Biscoff spread. The first and last time I've used Biscoff spread in a recipe, however, was when I made Biscoff Cookie Dough Balls. Those were so addicting. And it had been a while since I've made anything with Biscoff spread, I thought it was time to use this yummy, but better alternative, to peanut butter again.

If you can't find Biscoff spread, you can find Cookie Butter at your local Trader Joe's which works just as well. These cupcake were delicious with the hint of Biscoff in both the cupcake and frosting. Definitely the favorite among the two cupcakes I made for my birthday.

Cupcakes
6 oz. melted unsalted butter
1 cup plus 2 Tbsp. cake flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 cup plus 2 Tbsp. heavy cream
1 tsp. vanilla extract
2 large eggs
2 Tbsp. Biscoff spread

1) Preheat oven to 350 deg F. Line cupcake pan with 10 paper liners.

2) Allow butter to cool until it begins to solidify, but is still pourable.

3) In a bowl of an electric mixer, cake flour, sugar, baking powder and salt. With the mixer on low, gradually add melted butter and cream.

3) Add vanilla extract and eggs, one at a time. Mix just until combined. Add Biscoff spread and continue mixing until well incorporated.

4) Evenly distribute batter into cupcake liners about two-thirds full. Bake for 17-20 minutes until toothpick test comes out clean. Cool in pan for 10 minutes before cooling completely on a cooling rack.

Biscoff Buttercream frosting
4 Tbsp. unsalted butter, at room temperature
2 cups confectioner's sugar
1 tsp. vanilla extract
1-2 Tbsp. milk
3 Tbsp. Biscoff spread
crumbled Biscoff cookies for garnish (optional)

1) Cream together butter and confectioner's sugar. Add vanilla extract and milk, 1 tablespoon at a time until smooth and creamy. Beat in Biscoff spread. Frost cooled cupcakes.

Fluffernutter Cupcakes

Do y'all know what today means? Its a reason to celebrate and bake cupcakes. Yup, its my thirty-something birthday. And every year when my birthday comes around (or any one's birthday, for that matter), I always like to bake something. Especially a cake or cupcakes. This year, I actually wanted to try out two new cupcake recipes.

Have you ever had a fluffernutter sandwich? If not, you are totally missing out. I have to admit that I didn't learn of this kid favorite until I became an adult. Its a simple sandwich of peanut butter and marshmallow fluff. Simple, but oh so yummy. I came across this recipe for Fluffernutter Cupcakes from the Novice Chef a while ago that I had saved up for a special day. And today is as special as it gets, dontcha think?

The cupcake is a dense peanut-buttery goodness, paired with a light and airy marshmallow frosting that any peanut butter lover would enjoy. So as I celebrate my thirty-something birthday today surrounded by those I love most, why not have yourself a Fluffernutter Cupcake to celebrate with me :) And tomorrow, I shall continue with my cupcake celebration with another recipe.

Cupcakes
1 1/2 cups light brown sugar
1/2 cup canola oil
1 1/2 cup peanut butter
2 large eggs
2 tsp. vanilla extract
2 1/2 cups all-purpose flour
1 tsp. baking soda
2 tsp. cream of tartar
pinch of salt
1 1/2 cups milk
Chocolate Hazelnut spread for the filling

1) Preheat oven to 350 deg F. Line cupcake pans with paper liners. Set aside.

2)  In a bowl of an electric mixer, beat together brown sugar, oil, and peanut butter over medium speed until light and fluffy.   Beat in eggs, one at a time. Add vanilla extract.

3) In a medium bowl, combine flour, baking soda, cream of tartar and salt. Add dry mixture into batter, alternating with the milk. Scoop batter into prepared liners about three-quarters full. Bake for 15-20 minutes, or until toothpick test comes out clean. Cool in pan for about 10 minutes before cooling completely in a cooling rack.

4) Make a cone-shaped hole on the top of each cupcake. Pipe in chocolate hazelnut spread in the hole. Set aside.

Marshmallow Frosting
8 large egg whites
2 cups sugar
1/2 tsp. cream of tartar
2 tsp. vanilla extract

1) Place egg whites, sugar, and cream of tartar in a bowl set over a saucepan with simmering water (double boiler). Whisk constantly until sugar dissolves and the egg white mixture is warm to the touch, about 3-4 minutes.

2) Transfer egg white mixture in a bowl of an electric mixer fitted with a whisk attachment. Beat on low speed, and then gradually increasing to high speed until stiff, glossy peaks forms, about 5-7 minutes. Add vanilla extract and continue beating until well incorporated. Immediately frost prepared cupcakes.

Chocolate Frosting

It's my brother's birthday today. The other day when I was picking up my daughter from my parents' house after work, I guess my brother was hinting to my daughter by asking her what cupcake she would make for his birthday (because everyone knows that my she always bakes with me). I guess he wants us to make him some cupcakes. So she asked him what kind of cupcake he wanted and he said to surprise her. On our way home that afternoon, I asked my daughter what kind of cupcake she wanted to make for her Ninong, and she said chocolate. Perfect! I have been wanting to try out this new recipe for a basic Chocolate Frosting from Annie's Eats. And keeping with the tradition of making chocolate cake for my brother on his birthdays, it was perfect timing.

I used my go-to Chocolate Cake recipe to pair with this frosting and I think this combination fared better than the frosting I normally make with the chocolate cake. It was creamier and more indulgent. I think I'll be using this frosting more often.

9.5 oz chocolate chips (bittersweet, semi-sweet, or milk chocolate chips)
6 oz cream cheese, at room temperature
6 Tbsp. unsalted butter, at room temperature
2 cups confectioner's sugar, sifted
4 Tbsp. cocoa powder
pinch of sat
2/3 cup sour cream

1) Melt chocolate in a heat-proof bowl set over pot of simmering water (double boiler). Set aside to cool until just barely warm.

2) In a bowl of a stand mixer fitted with a paddle attachment, beat cream cheese and butter over medium-high speed until pale and fluffy, about 3-4 minutes. Gradually add in confectioner's sugar, cocoa powder and salt. Beat in melted and cooled chocolate and then sour cream. Continue beating until mixture is smooth and well blended. Frost cupcakes immediately before chocolate hardens and frosting sets.

Banana Crumb Cake

I've bookmarked this recipe for almost a year from Southern Plate. I've also saved up a bunch of frozen bananas in the hopes of finally making it. Well, I looked at my freezer full of bananas and I figured I better start using them.

I usually have my go-to Banana Bread recipe. But I felt that it was missing some "umph." I've always loved any loaf cakes with a crumb topping on it. And so when I found this recipe, I wanted to give it a try. Its a pretty straightforward recipe and the end product has become my new go-to recipe for a banana bread fix. This was delicious with that the extra flair of crunchy crumb topping.

Cake
2 cups sugar
3 ripe bananas
1 stick (1/2 cup) unsalted butter, at room temperature
2 eggs
1 tsp. vanilla
1 cup milk
2 cups all purpose flour
3 tsp. baking powder
1 tsp. salt

Crumb topping
1 stick unsalted butter, at room temperature
1 cup flour
1 cup (light or dark) brown sugar, lightly packed

1) Preheat oven to 350 deg F. Grease 2 loaf or 8x8 pans. Set aside

2) Place peeled bananas in a bowl of an electric mixer. Add sugar. Beat on low-medium speed until bananas are liquefied, about 1-2 minutes.

3) Add butter and continue beating until creamed together with the banana mixture, about 2 minutes. (Note: there will be small lumps of butter in the mixture).

4) Add remaining ingredients and continue beating until well combined. Set aside.

5) In a medium bowl, place all ingredients for the crumb topping. Cut together using a fork or 2 knives until you get a crumbly mixture.

6) Pour 1/4 of the mixture to each of the prepared pan. Sprinkle 1/4 of the crumb topping on top of each pan with the batter. Pour remaining batter on top of each pan, and sprinkle the remaining crumb topping . Bake for 45 minutes to an hour, until toothpick test comes out clean.

Caramel Cupcake


Caramel Cake is a favorite treat in the South. I've never had a Southern Caramel Cake, but I did have a different version of a Caramel cake in the Philippines during our recent trip that my daughter and I both really liked. So I made a note to myself to try to make something similar.

One of my co-workers and I got to talking about Southern Caramel Cake and she lead me to this recipe from Add A Pinch. She said that her Southern mom made hers with shortening, the way this recipe did. I was a little worried about using Trans Fat from the shortening because of all the health concerns with trans fat. But any tried and true recipe that mom makes is great recipe in my book.

I decided to make this recipe into cupcakes because they're better to share rather than having to cut into a whole cake to give away. The cake is a standard yellow cake that was pretty easy. The caramel is more like a topping rather than a frosting. Like I said, I've never had a real Southern Caramel Cake before, but I imagine that this came out quite good. However, as most people would know about about me, I like my frosting to be creamy. The caramel turned out pretty firm in this recipe. Firm the way a caramel candy would. There's nothing wrong with that, but I prefer my cakes to be creamy. So I think I may incorporate this recipe with another one to accomplish that.

Cake
1 cup (2 sticks) butter, softened
2 cups sugar
4 eggs
3 cups self-rising flour
1 cup buttermilk
2 tsp. vanilla extract

1) Preheat oven to 350 deg F. Line muffin pans with muffin cups, or grease and flour 3 9-inch round pans.

2) In a bowl of an electric mixer, cream butter until light and fluffy. Add sugar and continue to cream for about 8 minutes. Add eggs, one at a time, thoroughly mixing after each addition.

3) Alternately add flour and buttermilk, starting and ending with the flour. Add vanilla and beat well. Scoop into muffin cups about 3/4 full, or divide among the 9-inch round pans. Bake for 25-30 minutes or until toothpick test comes out clean. Cool for 5 minutes and remove cakes from pans and place on cooling racks to cool completely before frosting.

Caramel Icing 
4 cups sugar
2 cup buttermilk
1 cup shortening
1 cup (2 sticks) butter
2 tsp. baking soda

1) Place all ingredients in a large saucepan over medium-low heat until ingredients have melted together. Stir constantly to prevent from burning at the bottom.

2) Continue to cook until you reach the soft-ball stage (place a drop of the caramel in a cup of cold water, the caramel should turn into a "soft ball.")

3) Remove from heat and place the caramel in the bowl of an electric mixer. Using a whisk attachment, whip caramel until it holds when the mixer is stopped. Spread warm icing on cakes. Allow icing to cool before serving.

Peanut Butter Passion Cake

What better way to celebrate the day of Love than with something sweet from a cake called Peanut Butter Passion Cake. This cake popped up from the most unlikely places. Facebook. When I clicked the ad from my homepage, it lead me to this recipe from Just a Pinch Recipe Club. This entry is from Melissa, and when I saw what the cake looked like, OMG. I saved the recipe just for Valentine's Day. This cake is very rich and dense. And if you're a chocolate and peanut butter lover, this is another one for 'ya.

Happy Valentine's Day everyone! Do something sweet for your sweet :)

Cake
3 cups all-purpose flour
3/4 cup cocoa powder
2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
2 cups sugar
1 cup vegetable oil
2 eggs
1 tsp. vanilla extract
1 cup coffee, at room temperature
1 cup buttermilk

1) Preheat oven to 350 deg F. Grease and flour 2 9-inch round pans. Set aside

2) In a large bowl, combine flour, cocoa, baking powder, baking soda, and salt. Set aside.

3) In the bowl of an electric mixer, beat together sugar, oil, eggs, and vanilla extract on medium speed until well blended. Slowly add flour mixture in the bowl, alternating with the coffee and buttermilk. Continue beating over medium speed for 2-3 minutes.

4) Divide and pour batter into prepared pans and bake for 40-45 minutes or until toothpick test comes out clean. Cool for 5 minutes and remove from pan to cool completely before frosting.

Peanut Butter Cream Cheese frosting
8 oz (1 package) cream cheese, at room temperature
1 cup creamy peanut butter
1/2 cup confectioner's sugar
12 oz non-dairy whipped topping, thawed
1/2 cup chocolate sandwich cookie crumbs, for garnish
2 cups chopped peanut butter cups, for garnish
1/4 cup prepared chocolate frosting, melted

1) In a bowl of an electric mixer, combine cream cheese, peanut butter, and confectioner's sugar over medium speed until smooth.

2) Using a spatula, fold in whipped topping until well combined. Chill frosting for an our to overnight. Frosting will have the consistency of mousse.

3)  Frost cooled cake. Press cookie crumbs around the side of the cake. Top cake with chopped peanut butter cups. Drizzle melted chocolate frosting over peanut butter cups. Chill until serving time.

Irish Car Bomb Cupcakes


Happy New Year everyone! I wish this new year of 2012 brings each of you and your families joy, love, and prosperity. And I hope you all celebrated with bang on New Year's Eve.

Last night at New Year's eve, as usual, was spent with my folks at their place. My mom prepared (or should I say "ordered") most of the foods that was served for dinner. I offered to make my Tom Kha soup since most of us were sick and I figured soup would be a good thing for us. I also made my much loved Buffalo Chicken Dip. However, I really wanted to make cupcakes since I haven't made any in a while. Around St. Patrick's Day months ago, I came across recipes for Irish Car Bomb cupcakes all over the blogosphere. Do you know what an Irish Car Bomb is? I don't. Its apparently a cocktail that consists of Guinness Stout, Irish whiskey, and Bailey's Irish Cream. I'm a real light-weight when it comes to drinking alcohol. Its rare that you'll even see me with an alcoholic beverage, aside from cough medicine. So this cupcake was completely foreign to me. But I had a huge bottle of Bailey's Irish Cream that I like to put in my hot chocolate on those rare occasions, and I needed to start using it up. There's only so much hot chocolate with Bailey's Irish Cream I could take. And heck, it was New Year's Eve. If I wasn't gonna booze it up, might as well do it in a cupcake form. So when I came across this recipe from the Brown Eyed Baker, I took it as a sign to finally make it for the New Year.

I didn't have any Guinness Stout or Irish whiskey. So I substituted them with the Bailey's Irish Cream, which still gave the cupcake that hint of alcohol taste without overpowering it. Since I'm a light-weight, this version was perfect for me. It was really yummy. I especially like how creamy the frosting turned out.

Cupcakes
1 cup Guinness Stout (I used Bailey's Irish Cream)
1 cup (4 sticks) unsalted butter, at room temperature
3/4 cup cocoa powder
2 cups all-purpose flour
2 cups sugar
1 1/2 tsp. baking soda
3/4  tsp. salt
2 eggs
2/3 cup sour cream

1) Preheat oven to 350 deg F. Line cupcake pan with 24 cupcake liners.

2) In a medium saucepan, bring Guinness and butter to a simmer over medium heat. Add cocoa powder and whisk until mixture is smooth. Cool slightly.

3) Whisk flour, sugar, baking soda and salt in a large bowl to combine. Using an electric mixer, beat eggs and sour cream on medium speed until combined. Add the chocolate mixture into the egg mixture and beat just to combine. Reduce speed to low, gradually add flour mixture and beat briefly. Using a rubber spatula, fold mixture until completely combined.

4) Scoop batter into cupcake liners about 3/4 full. Bake until toothpick test comes out clean, about 17 minutes (note: centers may collapse/sink, but that's okay because it will be filled with the ganache). Cool completely on a cooling rack.

Whiskey Ganache filling
8 ounces (1 cup) semi-sweet chocolate chips
2/3 cup heavy cream
2 Tbsp. unsalted butter, at room temperature
2 tsp. Irish Whiskey (I used Bailey's Irish Cream)

1) Place chocolate chips in a heatproof bowl. In another bowl, heat heavy cream to a simmer and pour over chocolate chips. Allow to sit for about 1 minute. Using a rubber spatula, stir chocolate from the center and outward until smooth. Add butter and whiskey and stir until combined. Allow for the ganache to cool until thick but still soft enough to be piped.

2) Cut a 1-inch hole at the center of each cooled cupcake. Transfer ganache into a piping bag or plastic sandwich bag. Cut off the tip and pipe ganache into the hole of cupcake, filling all the way to the top.

Bailey's frosting
2 cups (8 sticks. yup, that's a lot) unsalted butter, at room temperature
5 cups confectioner's sugar
6 Tbsp. Bailey's Irish Cream

1) Using the whisk attachment of a stand mixer, whip butter on medium-high speed for about 5 minutes, occasionally scraping down the sides of the mixing bowl. Reduce speed to medium-low and gradually add confectioner's sugar until all of it is incorporated. Add the Bailey's Irish Cream, increase speed to medium-high and whip for another 2-3 minutes, until light and fluffy. Frost prepared cupcakes.

Chocolate Tres Leches Cake

Christmas is less than 3 weeks away. So I've been trying to get ideas for our Christmas meal with the families. I was thinking of a Latin themed menu. Mainly because a lot of my Latin dishes can be made ahead of time. There's just too much for me to do that I have to plan and make things ahead. I've thought of some casserole dishes that I can prepare ahead and then bake the day-of. And of course there's the crock pot that I can have on overnight to help save time. What I have left is dessert. I don't think I have the energy this year to bake cupcakes that I have to bake and frost. And then this recipe came to mind from What's Cookin' Chicago? that I've had saved up for a while. Joelen's version is gluten-free. So I decided to use my go-to Chocolate Cake recipe.

I remember having a Chocolate Tres Leches cake a while ago from The Kogi truck and I thought how great of an idea it was. And when I saw this recipe, I knew I had to make it. I love the traditional Tres Leches cake. But having it in a chocolate form just brings this yummy Mexican dessert over-the-top good.

1 recipe Chocolate Cake divided into 2 pans, cooled

Tres Leches
1 cup sweetened condensed milk
1 cup evaporated milk
1 cup heavy cream

whipped cream for topping

1) Combine milks in a medium bowl and mix until thoroughly incorporated. Remove cakes from their pans and place each cake on separate platters. Using a fork, generously poke numerous holes into prepared cakes. Pour milk mixture over both cakes. Refrigerate overnight. Serve with whipped cream on top.

Pumpkin Cheesecake Cupcakes


I love the fall season. The weather starts to cool, and the air is filled with the warm scent of cinnamon and nutmeg. Its also the precursor to the upcoming holiday season. Once Halloween is here, then its Thanksgiving, and then Christmas. My favorite holiday. One thing that's in abundance right now are pumpkins. Its pumpkin season and I've been scouring the web for recipes to use with the pumpkins we bought last week at the farm around the corner from our house.

One of my favorite pumpkin recipes, and one that hubby always requests me to make every fall, is my Pumpkin Cake Roll. I've always wanted a cupcake version of this yummy dessert and have always failed in my attempts. Then I found this great recipe for Pumpkin Cheesecake Cupcakes from Your Cup of Cake. Cream cheese and pumpkin go together so well that I knew this recipe would be awesome. And it was. The cake was really moist with a touch of cheesecake. I've finally found the perfect pumpkin cupcake.

Cheesecake filling
8 oz package cream cheese, softened
1/2 cup sugar
1 egg
1 tsp. vanilla extract

Cake
1/2 cup oil
1/3 cup applesauce
1 cup sugar
1/2 cup brown sugar, lightly packed
2 eggs
2 1/3 cup all purpose flour
1 Tbsp. pumpkin pie spice
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
3/4 cup milk
1 3/4 cup pumpkin puree

1) To make the cheesecake filling, beat together cream cheese and sugar until evenly combined. Add egg and vanilla and continue beating until smooth. Place in a bowl, cover and chill in the freezer while making the cake batter.

2) Preheat oven to 350 deg F. Line pans with cupcake liners.

3) In a bowl of a stand mixer, beat together oil, applesauce, sugar and brown sugar on low speed. Add eggs one at a time and mix well. Do not over-beat or beat on high.

4) In another bowl, combine flour, pumpkin pie spice, salt, baking soda and baking powder. Add half of the dry ingredients into wet ingredients and beat over low-medium speed just until combined. Add milk. Add the remaining dry ingredients and continue beating until combined. Add pumpkin puree.

5) Scoop cupcake batter into cupcake liners about 3/4 full. Place a spoonful of the cheesecake batter on top of cupcake batter. Slightly swirl cheesecake batter into cupcake batter. Bake for 15-20 minutes, until toothpick test comes out with no orange batter (the cream cheese may come off a little). Cool completely before frosting.

Cinnamon Cream Cheese Buttercream
8 oz package cream cheese, softened
1/2 cup (1 stick) unsalted butter, at room temperature
3-4 cups confectioner's sugar
1 tsp. vanilla extract
1/4 tsp. ground cinnamon
milk, if needed
cinnamon sugar (optional)

1) Cream together cream cheese and butter for about 3-4 minutes until smooth on medium speed. With the mixer on low, add confectioner's sugar, 1 cup at a time until desired consistency. Add vanilla and cinnamon. Add milk if necessary to thin out frosting to reach desired consistency. Frost cupcake and top with cinnamon sugar (optional).

Lime Coconut Macadamia Nut Cheesecake

Have you ever tried the Mango Key Lime Cheesecake at the Cheesecake Factory? OMG! It is to DIE for. I'm not much of a cheesecake eater, but occasionally when we find our way into the Cheesecake Factory, I like to split a cheesecake with someone or with a few people. One day, one of my good friends and I met for lunch and I wanted to try the Mango Key Lime Cheesecake. But I was stuffed. So I took it to-go. Then when I went home and took that first bite, I was like "where have you been all my life?" It was sinfully delicious. Its a Key Lime cheesecake filling, topped with a mango custard and a coconut macadamia nut crust. Sounds good, huh?

From our recent trip to Hawaii, I brought several bags of chopped macadamia nuts to bake with. I had so many plans for these little babies. And making a Lime Coconut Macadamia Nut Cheesecake was one of them. I did a quick search and found this recipe for a Toasted Coconut and Macadamia Nut Tropical Cheesecake from The Prepared Pantry. The recipe sounded just like the Mango Key Lime Cheesecake, but without the mango. I decided to give it a try and modify it a tiny bit by adding some coconut syrup to the crust to give some extra coconut flavor. It isn't the Mango Lime cheesecake, but it was pretty good. Next time, I have to try to find the mango custard to put on top of this cheesecake.

Crust
1 1/2 cups vanilla wafer crumbs
3/4 cup chopped macadamia nuts
1/3 cup toasted shredded coconut
4 1/2 Tbsp. butter, melted
2 Tbsp. coconut syrup
2 Tbsp. sugar

Filling
2 (8 0z) packages cream cheese
1 (14 oz can) condensed milk
3 large eggs
1/4 cup lime juice, preferably key lime
2 Tbsp. finely grated lime peel
whipped cream topping
toasted shredded coconut for garnish
lime slices for garnish

1) Preheat oven to 325 deg. F.

2) In a medium bowl, combine all the ingredients for the crust. Mix until well combined. Press the mixture across the bottom and up the sides of a 10-inch springform pan. Refrigerate crust while making the filling.

3) Using a stand mixer, slowly beat cream cheese until soft and smooth. Add condensed milk, eggs, lime juice, and lime peel. Continue beating just until smooth. Pour mixture into prepared crust. Bake for 50 minutes or until cheesecake is firm.

4) Allow to cool for 10 minutes. Loosen the sides using a spatula and remove the ring. Refrigerate to cool completely. Garnish with whipped cream, toasted coconut and lime slices.

Chocolate Pumpkin Patch Halloween Cupcakes


I recently came across some pumpkin spice-flavored marshmallows in the shape of pumpkins. I knew my daughter would love them (because she loves anything that is marshmallow) so I bought a bag. The bag had some fun decorating ideas with the use of these pumpkin-shaped marshmallows. Then I strolled into Williams-Sonoma the next day and my daughter wanted me to buy some Halloween sprinkles. With all these festive decorating tools, I thought it would be fun to make Halloween cupcakes with my daughter.

Last year, I made Vanilla Halloween cupcakes and she wasn't much interested in helping me decorate them. This past year, she's shown a great interest in helping me bake and decorate, so she was happy to help out this time around. The bag of marshmallows suggested making a pumpkin patch on the cupcakes using the marshmallows. So I thought a chocolate cupcake base would look cool using my Chocolate Cake with Chocolate Cream Cheese frosting recipe, or any chocolate cupcake recipe. I think they turned out pretty cool. We also used the Halloween sprinkles, which she loved using on the cupcakes.

Pumpkin-Spiced marshmallows
sweetened shredded coconut
green food coloring

1) Prepare chocolate cake recipe according to directions. Line muffin tins with cup and fill with the batter about 3/4 full. Bake for 25-30 minutes, or until toothpick test comes out clean. Cool completely before frosting.

2) Prepare frosting according to directions. Spread frosting on top of cooled cupcakes. Set aside.

3) Place shredded coconut in a small bowl. Add a few drops of green food coloring and stir coconut to distribute the color. Continue adding food coloring until desired shade of green is established. Sprinkle colored coconut on top of frosted cupcake. Arrange 2 pumpkin-spiced marshmallows on top of colored coconut.

Magnolia Bakery Vanilla Cupcakes


I think my pursuit for the perfect Vanilla cupcake recipe has ended here.

I love Vanilla cupcakes. I think I love it more so than a chocolate cupcake. Take me to a cupcake store and I'll most likely choose cupcakes that are vanilla based rather than chocolate based. Don't get me wrong. I still love my fair share of chocolate. But there's something about vanilla cupcake that I can't resist.

I've been looking for the perfect Vanilla cupcake recipe ever since I made them last year for Halloween. I wasn't too happy with that recipe and I vowed to find the recipe that is as close to the ones I get at my favorite cupcake stores. And then I found this recipe from Martha Stewart for the Magnolia Bakery Vanilla Cupcakes. I've had the actual cupcakes from the Magnolia bakery before when my sister-in-law brought some during one of our visits to my mother-in-law. They were so delicious. So you can only imagine the excitement I had when I found this recipe.

These were quite easy to make. However, you need to make sure to not over-fill the cupcake liner with the batter because it will puff up and burn on the sides like they did on mine. But the cupcake tastes just as good as the bakery itself. Light and fluffy cake, sweet and decadent frosting. The perfect combination.

Cupcakes
1 1/2 cup self-rising flour
1 1/4 cup all purpose flour
2 sticks unsalted butter, softened
2 cups sugar
4 large eggs, at room temperature
1 cup milk
1 tsp. pure vanilla extract

1) Preheat oven to 350 deg F. Line muffin tins with paper liners. Set aside.

2) In a large bowl, combine flours together and set aside. In a bowl of an electric stand mixer, cream butter until smooth and creamy. Gradually add sugar, beating until fluffy, about 3 minutes. Add eggs, one at a time, beating well after each addition.

3) Add dry ingredients in 3 parts, alternating with the milk and vanilla. Scrape down the sides of the bowl with each addition. Beat until ingredients are incorporated, but do not over beat.

4) Using an ice cream scoop, scoop batter into prepared liners about half to 3/4 full. Bake for 20-25 minutes, or until toothpick test comes out clean. Rotate pan half way through the baking. Cool for 15 minutes and transfer cupcakes to a wire rack to cool completely before frosting.

Vanilla Buttercream
2 sticks unsalted butter, softened
6-8 cups confectioner's sugar
1/2 cup milk
2 tsp. pure vanilla extract

1) In a bowl of an electric stand mixer, combine butter, 4 cups of the confectioner's sugar, milk, and vanilla extract. Beat on medium speed until smooth and creamy, about 3-5 minutes.

2) Gradually add remaining sugar, 1 cup at a time, beating for about 2 minutes after each addition, until desired consistency. Frost cupcakes and serve at room temperature.

Red, White & Blue Cupcakes


No holiday is ever complete unless I make cupcakes. I've had this recipe bookmarked since last 4th of July from Sing for your Supper and I wanted to make it a point to make it this year. I loved how these cupcakes turned out. Especially the different layers of color. They look so festive. And they taste like the ones I buy at one of my favorite cupcake shops. Especially the frosting. I've actually been looking for this frosting and I'm glad to have encountered them in this recipe. You can definitely omit the food coloring if you want to make them a plain, white cupcake.


Cupcakes
2 1/4 cups cake flour
1 Tbsp. baking powder
1/2 tsp. salt
1 1/4 cups buttermilk
4 egg whites
1 1/2 cups sugar
3 tsp. grated lemon zest
1 stick unsalted butter, at room temperature
1 tsp. vanilla extract

1) Preheat oven to 350 deg F. Line cupcake pans with cupcake liners.

2) Sift together cake flour, baking powder and salt. Set aside. Whisk together buttermilk and egg whites. Set aside.

3) Place sugar and lemon zest in the bowl of a stand mixer and rub them together with your fingers until sugar is moist and fragrant. Add butter, and using a paddle attachment, beat at medium speed for 3 minutes until mixture is very light.

4) Beat in vanilla extract. Gradually add one-third of the flour mixture. Beat in half of the of the buttermilk mixture, then half of the remaining flour mixture until well incorporated. Add the remaining buttermilk mixture and beat until homogeneous. Add the remaining dry ingredients. Continue beating for another 2 minutes to ensure that it is thoroughly mixed and well aerated.

5) To color the batter, divide batter into three medium bowls. Add red food coloring to one bowl until desired color is reached. Add blue food coloring in another bowl until desired color is reached. Place about a good tablespoon of of blue colored batter to the bottom of the cupcake liner. Top with another tablespoonful of white batter. Then add a tablespoon of the red batter. Cupcake liner should be half filled. Bake for 15-20 minutes, until cupcakes are well risen and springy to the touch. Transfer to cooling racks to cool completely before frosting.

Vanilla Buttercream
2 sticks unsalted butter, at room temperature
6-8 cups confectioner's sugar
1/4 cup milk
1 1/2 tsp. vanilla extract

1) Place butter in a bowl of a stand mixer. Add milk, vanilla, and 4 cups of confectioner's sugar. Beat on medium speed until smooth and creamy, about 3-5 minutes.

2) Gradually add the remaining sugar, 1 cup at a time, beating well after each addition, until the icing is thick enough to be of good spreading or piping consistency. You may not need to add all of the sugar. Use and store icing at room temperature as the icing will set if chilled.
